You can make your own hot sauce from scratch for buffalo wings at home with this recipe.
Step 1: Decide on a pepper
Decide how hot you want your sauce to be.
Try jalapenos if you like your sauce mild, cayenne peppers for a hotter sauce, or -- if you're daring -- habaneros, which will have you running for milk.
Step 2: Determine how many peppers to use
Determine how many peppers to use in your sauce. For mild sauce, use about half a pound. For hotter sauce, use up to 2 pounds.
Step 3: Dry your peppers
Dry your peppers by cutting off the stems and splitting them lengthwise, then baking them at 175 degrees for 6 to 8 hours. When they've cooled, put on your gloves, and crush them in your hands.
If you have the time, you can use a sewing needle to thread the peppers on a length of fishing line and hang them in a window to dry naturally.
Step 4: Saute onion and garlic
Mince the onion, garlic, and carrots, and saute them in the olive oil until the onion is soft and translucent. Then puree them in a food processor with the dried peppers.
Step 5: Add vinegar an lime juice
Return the puree to the saute pan, add the white vinegar and lime juice, and heat it through.
Step 6: Add food
Enjoy your homemade on anything from scrambled eggs to chicken wings!
